Pure C, the restaurant of the famous Dutch chef Sergio Herman, is no longer on the list of Michelin stars in the Netherlands. Last year, the restaurant received two more.

The fact that Sergio Herman can no longer call his restaurant in Cadzand a star restaurant was announced on Monday during the presentation of the Michelin stars in the Netherlands. Pure C by Sergio Herman was awarded its second star in the 2019 edition. The guide then pointed out that emotion played an important role in Pure C’s cuisine.

At the end of last year, Dutch top chef Syrco Bakker left Pure C. He was at the helm of the restaurant for twelve years. “Now I am ready to write my own story,” said Bakker at the time, who often described the Dutch chef as his “mentor”.

Earlier, Herman also saw Nick Bril leave, with whom he founded The Jane (**) in Antwerp together. About two years ago Herman sold his shares in the business to Bril and the two separated.

In the Netherlands, Herman still has a star with AIRrepublic in Cadzand and in Belgium he still has a star business with Le Pristine in Antwerp.

125 Michelin stars in the Netherlands

Two three-star Dutch restaurants retain their award. These are De Librije in Zwolle and Inter Scaldes in Kruiningen. The jury calls them “the banners of Dutch gastronomy”.

Chef Jurgen van der Zalm’s restaurant Vinkeles in Amsterdam is the only one to receive a second star this year. The Michelin Guide praises the “classic craftsmanship in the form of stunning sauces and playful creativity”. Seventeen restaurants have been awarded one star.

The Netherlands now has two restaurants with three stars, twenty restaurants with two stars and 103 restaurants with one star.

This year, the so-called green stars were also awarded for the third time to restaurants that are leaders in the field of sustainability. Four restaurants were awarded this award: Hof Aan Zee in Koudekerke, Rotonde in Rotterdam, Morille in Koudekerke and De Dyck in Woubrugge.
