This crispy potato salad has been making the rounds on TikTok for a while. At the editorial office we couldn’t resist all that crispy potato temptation, so we started working on this potato salad 2.0. You’ve never had it this good!

Ingredients

For 4 persons

  • 1 kilo of potatoes
  • 2 tablespoons neutral oil
  • Pepper and salt
  • 150 grams Greek yogurt
  • 100 grams of mayonnaise
  • 2 teaspoons mustard
  • 1/2 lemon, the juice
  • 2 teaspoons red wine vinegar
  • 10 grams dill, coarsely chopped
  • 10 grams parsley, coarsely chopped
  • 1/2 cucumber, thinly sliced
  • 4 stalks celery, diced
  • 4 spring onions, in rings
  • 1/2 red onion, chopped and washed

This is how you make it

Start by cooking the potatoes in a pan with plenty of salted water and heat the oven to 220 degrees. Drain the cooked potatoes and add to a baking tray lined with baking paper. Crush the potatoes with a glass or other object. Drizzle oil over the smashed potatoes and sprinkle generously with salt and pepper. Place in the oven and bake for 90 minutes until crispy.

In the meantime, make sauce from the smashed potato salad. To do this, put mayonnaise together with Greek yogurt in a bowl. Add the mustard, garlic, lemon juice and vinegar. Also add the fresh dill and parsley and season with salt and pepper. Stir everything well.

Add the cucumber, red onion, spring onions and celery to the potato salad. Stir well so that everything is mixed and put in the refrigerator. Let the crispy potatoes cool briefly and then add to the salad. Stir and present on a platter.
