A one-pan dish with pearl couscous is delicious every day of the week. Filled with tomatoes and spinach, this is not only very easy, but it is also full of vegetables.

Ingredients:
– 1 shallot
– 250 g colored snack tomatoes
– 1 tbsp olive oil
– 160 gr pearl couscous
– 250 ml vegetable stock
– 200 g baby spinach
– 1 tbsp garam masala spices
– Pepper and salt
– 4 sprigs of parsley
– 40 g feta

Preparation method

Peel and chop the shallot and halve the tomatoes. Heat the olive oil in a pan and add the shallot. Fry for 3 minutes and add the pearl couscous together with the vegetable stock. Bring to the boil and turn the heat to low. Place the lid on the pan and let it cook for 5 to 10 minutes. Stir occasionally and taste whether the pearl couscous is done.

When the pearl couscous is cooked, stir the spinach, tomatoes and garam masala through the mixture and season with some salt and pepper.

Chop the parsley finely. Divide the pearl couscous among the plates, crumble the feta over it and garnish with parsley.
