A nice spring recipe, with spring onions! You can serve this classic with a twist in no time.

Ingredients:

For 4 persons

800 g floury potatoes

(peeled)

800 g chopped string beans

1 bunch of spring onions

2 cloves of garlic

300 g minced chicken

1 tbsp mustard

Dash of milk

Pinch of cumin seeds or powder

Pinch of nutmeg

Oil, salt and pepper

This is how you make it:

Finely chop the spring onions. Did you know that you only have to cut off the bottom of the spring onion and the tough top part of the spring onion? The rest is edible and delicious. Finely chop the garlic. Then make small meatballs from the minced chicken.

Boil the potatoes in plenty of boiling water for about 15 minutes. In the meantime, heat a little oil in a frying pan and fry the chicken meatballs for about 6 minutes until golden brown and done. Then remove from the frying pan and set aside. Fry the spring onion and string beans in the same pan for about 8 minutes, stirring regularly. Add a pinch of cumin seeds and nutmeg and stir. Then turn off the fire.

Once the potatoes are done, drain the potatoes. Add a dash of milk and a tablespoon of mustard. Mash the potatoes finely and stir in the vegetables. Serve with chicken meatballs.
