How do you make your own tompouce?

The tompouce, an iconic delicacy that is inextricably linked to Dutch holidays and pleasant coffee mornings. This traditional pastry, with its recognizable layers of puff pastry and sweet, pink icing, is a favorite treat for many. But how great would it be if you could make this delicious sweet yourself for coffee or as a dessert after a nice dinner with friends or family? In this blog we explain step by step how to prepare a delicious tompouce at home.

Supplies

For about 10 tompouces you will need:

For the puff pastry:
  • 1 roll of ready-made puff pastry (or homemade for the ambitious bakers among us)
For the pastry cream:
  • 500 ml milk
  • 1 vanilla pod (or 2 teaspoons vanilla extract)
  • 4 egg yolks
  • 100 g sugar
  • 40 g cornstarch
For the glaze:
  • 150 g icing sugar
  • 2 to 3 tablespoons of water or lemon juice
  • Red food coloring (for the traditional pink color)
Preparation method
Step 1: The puff pastry

Start by preheating your oven to 180 degrees Celsius. Roll out the puff pastry and cut it into equal rectangles (about 10 cm long and 5 cm wide). Place the rectangles on a baking tray lined with baking paper and prick the dough with a fork to prevent it from rising too much. Bake the puff pastry in the preheated oven until golden brown and crispy, about 15-20 minutes. Then let it cool completely.

Step 2: The pastry cream

While the puff pastry is cooling, you can prepare the pastry cream. Heat the milk in a pan together with the vanilla pod over medium heat. In the meantime, beat the egg yolks with the sugar until the mixture becomes lighter in color. Then add the cornstarch and mix well. Remove the vanilla pod from the milk (scrape out the seeds and add them to the milk) and pour the warm milk into the egg mixture while stirring. Pour this mixture back into the pan and heat over low heat, stirring constantly, until the cream begins to thicken. Then let the cream cool to room temperature.

Step 3: The glaze

Mix the icing sugar with the water or lemon juice. Add a few drops of red food coloring until you get the desired pink shade. The mixture should be thick enough to serve as a top layer, but still spreadable.

Step 4: Assemble

Take a piece of cooled puff pastry and spread a generous layer of pastry cream over it. Cover with a second piece of puff pastry. Finally, spread a thin layer of the glaze over the top layer of puff pastry.

To serve

Let your tompouces rest for a while so that the glaze can harden. Serve them with a cup of coffee or tea and enjoy your homemade treat.
