Lovers of traditional grilled sausage can indulge themselves with this new snack: a fried grilled sausage with cheese, of course in a crispy jacket.

The grilled meat, invented by Marcel Norder of Snacksalon De Schelp in Roelofarendsveen, is currently a hit, especially in the Bollenstreek. “It’s actually a regular grill sausage that you can fry,” Norden told Editie NL. “Here in the village, Keurslager Van der Meer is really known for their grilled sausage. I wondered why there was no snack version, and I started talking to the butcher.” They worked on the snack for a year – the result being a fryable grilled sausage in snack format.

He now also sells the snack to entrepreneurs from Lisse, Leiden, Koudekerk aan den Rijn and Utrecht. “We hope that the barbecue will spread like an oil slick across the country,” Norder continues. “We still make it by hand, hopefully a large party will be interested so that we can also get it from the wholesaler.”

But what needs to happen before a snack from a local entrepreneur is available nationally? “New snacks often get through but are quickly forgotten,” fritoricus Ubel Zuiderveld of foodservicewatcher.nl explains to Editie NL.

“A local entrepreneur starts it and before you know it there are ten or fifteen businesses selling it. If it gets really big then you have to have an external producer because then it becomes too difficult to produce it all yourself.” According to Zuiderveld, this has happened, for example, with the bami and nasi slices.

Souflesse

The last snack that has really become big, according to him, is the souflesse, a kind of chic cheese soufflé. “Even though it is a variation on an existing snack, so it doesn’t really count.” And according to Zuiderveld, you see that more often. “Lately you have seen a lot of variation in existing snacks, especially the frikandel. But if you look at the top ten most sold snacks, they are often the older snacks.”

According to him, it is easier to market a sauce. “You also see Zeedijk sauce and Brander mayonnaise a lot in snack bars. Just like the joppie sauce, of course.” It remains to be seen whether the grilled meat will be a success. “At least he has his name with him.”
