Delicious for the Easter table or as a special pampering breakfast. Extra plus: the waffles are also healthy. The dairy spread topping and fresh orange cubes make the carrot cake waffles even tastier.

You need:

For +/- 2 persons

175 g yoghurt

2 eggs

75 g whole wheat flour

75 g carrot

1.5 tsp baking powder

1.5 tsp cinnamon

0.5 tbsp honey

Oil

Topping

75 g dairy spread light

1 orange

1 tbsp honey

This is how you make it:

Finely grate the carrot and place in a bowl with yogurt, eggs, whole wheat flour, baking powder, cinnamon and half a tablespoon of honey. Stir until combined. Then heat the waffle iron and grease the iron with a little oil. Once the waffle iron is up to temperature, you can add the batter. Spoon 2 to 3 tablespoons of batter per waffle into the iron and bake the waffles for about 4 minutes, until they are golden brown. Put the waffles aside and grease the waffle iron again with a little oil. Then make the next batch of waffles until the batter is used up.

Add a little orange zest, a tablespoon of orange juice and honey to the dairy spread and stir. Cut the orange further into cubes. Serve the waffles with the topping and orange cubes. Enjoy your meal!
